Mixed mushrooms and pan fried quail breast tarte fine with poached egg and truffle vinaigrette
 
 
Vol-au vent with mussels, shrimps, asparagus and beurre blanc
 

Main courses

Turbot fillets, shitaké mushroom ravioli, baby vegetables and red pepper sauce
 
 
Herb fed chicken breast poached in Champagne, sorrel flan, parsnip and baby vegetable
 
 
Five spice confit lamb shank, rösti and baby vegetable

Grilled Pont -l’Évèque cheese with pear and salad

Dark chocolate sphere filled with passion fruit mousse, served with warm caramel sauce
