Whitby crab and confit leek ravioli, saffron crab bisque, and samphire

Lemon breadcrumbs deep fried langoustines, guacamole, mayonnaise, and cucumber pickles

Crayfish and wild mushroom feuilleté (wrapped in puff pastry), with Champagne beurre blanc

Duck and black truffle ballotine, confit duck leg spring roll, and Puy lentil salad with vinaigrette

Salted baked celeriac, truffle cream, celeriac crisps, hazelnut dressing

 

 

Main Courses

Lobster and chorizo cassoulet, baby vegetables, with lobster and Armagnac bisque

Herb pesto marinated beef, mushroom flan, baby vegetables, Benedictine sauce

Turbot fillet, clams and squid ink linguini, shellfish sauce

Gressingham duck breast with figs and honey, baby vegetables, Port sauce

Pan fried lamb filet, garden pea croquette, baby vegetables, vermouth sauce

 

 

 

Desserts

Dark chocolate and hazelnut praliné tart, coffee and green cardamom sauce

Le Citron: yuzu lemon mousse, minted candied lemon, white chocolate coating, lemongrass coulis

Milk chocolate sphere, strawberry and mascarpone mousse, warm caramel sauce

Vanilla Cloud: chocolate biscuit, vanilla Bavaroise, raspberry centre, lemon verbena coulis

Summer Paris-Brest: Choux bun, elderflower mousse, roasted apricot, toasted flaked almond
