Salmon gravlax marinated in beetroot juice, gin sour cream, blinis

Heritage tomatoes, tomato jam, burrata espuma, parmesan crumble, wild garlic pesto

Wild mushroom tart with smoked duck breast, poached duck egg, truffe yolk curd

Deep fried king prawns in kadayif parcel, parsnip and black garlic mousseline, beurre blanc

Roasted figs stuffed with Harrogate Blue mousse, rocket salad, croutons, blackcurrant vinaigrette

Main Courses

Cod loin cooked in lemon oil, samphire croquette, shellfish cream

Pork cheeks cooked in pear cider, roasted pear, baby vegetables, Williamine eau-de-vie sauce

Slow-cooked feather blade Bourguignon, mixed vegetables, red wine sauce

Herb fed chicken breast, hazelnut crumbs, baby vegetables, ginger beer sauce

Black rice risotto, langoustines, Emmental tuile, parsley sauce

Desserts

Tarte Tatin: apples confit in maple syrup, vanilla Chantilly, apple and Calvados coulis

Raspberry mousse, sesame and white chocolate biscuit, salted caramel coulis

Almond and blueberry financier, Namaleka cream with amaretto, blueberry sauce

Milk chocolate, caramel, and peanut tart, passion fruit crème anglaise
